Zesty Avocado & Corn Fritters with Lime Crema

Crispy on the outside and creamy on the inside, these avocado and corn fritters are a delightful light dinner that bursts with fresh flavors, perfect for a summer evening.

Ingredients:


  • 2 ripe avocados, diced
  • 1 cup fresh or frozen corn kernels
  • 1/2 cup all-purpose flour
  • 1/4 cup cornmeal
  • 2 green onions, finely chopped
  • 1/4 cup cilantro, chopped
  • 1 tsp baking powder
  • 1/2 tsp smoked paprika
  • Salt and pepper, to taste
  • 1/4 cup milk of choice
  • 2 tbsp olive oil, for frying

Lime Crema:

  • 1/2 cup sour cream or Greek yogurt
  • Zest and juice of 1 lime
  • Salt, to taste

Cooking Instructions


  1. In a large bowl, gently combine the diced avocados, corn kernels, green onions, and cilantro.
  2. In a separate bowl, whisk together the flour, cornmeal, baking powder, smoked paprika, salt, and pepper.
  3. Gradually add the dry ingredients to the avocado mixture, folding gently. Add the milk and stir until just combined.
  4. Heat olive oil in a large skillet over medium heat. Scoop 1/4 cup of the batter for each fritter and flatten slightly in the skillet.
  5. Cook for 3-4 minutes on each side or until golden brown and crispy. Transfer to a paper towel-lined plate.
  6. For the lime crema, mix the sour cream, lime zest, lime juice, and salt in a small bowl.
  7. Serve the fritters warm with a dollop of lime crema on top.
