Cooking Instructions
- In a large bowl, gently combine the diced avocados, corn kernels, green onions, and cilantro.
- In a separate bowl, whisk together the flour, cornmeal, baking powder, smoked paprika, salt, and pepper.
- Gradually add the dry ingredients to the avocado mixture, folding gently. Add the milk and stir until just combined.
- Heat olive oil in a large skillet over medium heat. Scoop 1/4 cup of the batter for each fritter and flatten slightly in the skillet.
- Cook for 3-4 minutes on each side or until golden brown and crispy. Transfer to a paper towel-lined plate.
- For the lime crema, mix the sour cream, lime zest, lime juice, and salt in a small bowl.
- Serve the fritters warm with a dollop of lime crema on top.
