Tropical Umami Burst Caribbean Salad

Ingredients:


  • 1 ripe mango, peeled, pitted, and diced
  • 1 cup cooked black beans, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1/2 cup grilled pineapple chunks
  • 1 avocado, sliced
  • 1 small red onion, thinly sliced
  • 1/4 cup sun-dried tomatoes, chopped
  • 1/4 cup toasted cashews, roughly chopped
  • 1 tablespoon capers, drained
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 1 teaspoon sesame oil
  • 1 tablespoon nutritional yeast
  • 1 tablespoon chopped fresh cilantro
  • Salt and pepper to taste

Cooking Instructions


  1. In a small bowl, whisk together soy sauce, lime juice, sesame oil, and nutritional yeast to create the dressing. Set aside.
  2. In a large mixing bowl, combine mango, black beans, cherry tomatoes, grilled pineapple, avocado, red onion, sun-dried tomatoes, toasted cashews, and capers.
  3. Drizzle the prepared dressing over the salad ingredients.
  4. Gently toss the salad to ensure all ingredients are well coated with the dressing.
  5. Season with salt and pepper to taste.
  6. Garnish with freshly chopped cilantro before serving.
