Tropical Tangy Caribbean Salad

Ingredients:


  • 2 cups fresh pineapple, diced
  • 1 ripe mango, peeled and diced
  • 1 medium avocado, diced
  • 1 cup jicama, peeled and julienned
  • 1 small red onion, thinly sliced
  • 1 red bell pepper, diced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon finely grated fresh ginger
  • Sea salt, to taste
  • Freshly ground black pepper, to taste
  • 1/4 cup toasted coconut flakes (unsweetened)

Cooking Instructions


  1. In a large mixing bowl, combine the pineapple, mango, avocado, jicama, red onion, and red bell pepper.
  2. In a small bowl, whisk together the lime juice, olive oil, grated ginger, sea salt, and black pepper to create the dressing.
  3. Pour the dressing over the salad and gently toss to combine, ensuring all ingredients are well coated.
  4. Sprinkle the chopped cilantro and toasted coconut flakes over the top of the salad.
  5. Serve immediately or refrigerate for up to 2 hours to allow the flavors to meld. Enjoy your refreshing and tangy Caribbean salad!
