Cooking Instructions
- Preheat your oven to 375°F (190°C).
- In a small bowl, combine the olive oil, cumin, coriander, smoked paprika, cayenne pepper, salt, and black pepper. Mix well to form a marinade.
- Coat the chicken breasts evenly with the marinade. Place them in a baking dish and drizzle with lemon juice and zest.
- Bake the chicken in the preheated oven for about 25-30 minutes, or until the chicken is fully cooked and juices run clear.
- While the chicken is baking, prepare the date relish. In a medium bowl, combine the chopped dates, red onion, apple cider vinegar, orange zest, and juice. Stir in the chopped mint leaves and season with salt to taste.
- Once the chicken is done, let it rest for a few minutes. Serve each chicken breast with a generous spoonful of zesty date relish on top. Garnish with fresh cilantro.
