Tangy Moroccan Chicken with Zesty Date Relish

A uniquely tangy Moroccan inspired dish, combining succulent chicken with a zesty date relish, perfect for paleo enthusiasts.

Ingredients:


  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper
  • Salt and freshly ground black pepper, to taste
  • Zest and juice of 1 lemon
  • 1/4 cup fresh cilantro, chopped

For the Zesty Date Relish:

  • 1/2 cup pitted dates, finely chopped
  • 1/2 cup red onion, finely chopped
  • 1 tablespoon apple cider vinegar
  • Zest and juice of 1 orange
  • 1/4 cup fresh mint leaves, chopped
  • Salt, to taste

Cooking Instructions


  1. Preheat your oven to 375°F (190°C).
  2. In a small bowl, combine the olive oil, cumin, coriander, smoked paprika, cayenne pepper, salt, and black pepper. Mix well to form a marinade.
  3. Coat the chicken breasts evenly with the marinade. Place them in a baking dish and drizzle with lemon juice and zest.
  4. Bake the chicken in the preheated oven for about 25-30 minutes, or until the chicken is fully cooked and juices run clear.
  5. While the chicken is baking, prepare the date relish. In a medium bowl, combine the chopped dates, red onion, apple cider vinegar, orange zest, and juice. Stir in the chopped mint leaves and season with salt to taste.
  6. Once the chicken is done, let it rest for a few minutes. Serve each chicken breast with a generous spoonful of zesty date relish on top. Garnish with fresh cilantro.
