Ingredients


For the Chicken

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1/2 cup cornstarch
  • 2 large eggs, beaten
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Vegetable oil, for frying

For the Sauce

  • 1/2 cup rice vinegar
  • 1/3 cup ketchup
  • 1/4 cup soy sauce
  • 1/3 cup sugar
  • 1 tablespoon cornstarch mixed with 1/4 cup water (slurry)

For the Stir-Fry

  • 1 tablespoon vegetable oil
  • 1 small red bell pepper, cut into chunks
  • 1 small green bell pepper, cut into chunks
  • 1 cup pineapple chunks (canned or fresh)
  • 2 cloves garlic, minced
  • 1/4 teaspoon ginger, minced (optional)
  • Sesame seeds and sliced green onions, for garnish

Cooking Instructions


  1. Prepare the Chicken: Season the chicken pieces with salt and pepper. Dredge them in cornstarch, then dip in the beaten eggs.
  2. Fry the Chicken: Heat vegetable oil in a skillet over medium heat. Fry the chicken in batches until golden and crispy, about 4-5 minutes per side. Drain on paper towels and set aside.
  3. Make the Sauce: In a small saucepan, combine the rice vinegar, ketchup, soy sauce, and sugar. Bring to a simmer over medium heat, stirring occasionally. Stir in the cornstarch slurry to thicken the sauce. Cook for an additional 2-3 minutes until thick and glossy.
  4. Stir-Fry the Vegetables: In a large skillet or wok, heat 1 tablespoon of oil. Add the garlic and ginger, sauté for 30 seconds. Add the bell peppers and stir-fry for 2-3 minutes until slightly tender.
  5. Combine: Add the pineapple chunks and fried chicken to the skillet with the vegetables. Pour the sweet and sour sauce over the mixture and toss everything to coat evenly.
  6. Serve: Remove from heat, garnish with sesame seeds and sliced green onions. Serve with steamed white rice or your favorite side.
