Ingredients:

  • 1 lb ground lamb
  • 2 tbsp harissa paste
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1/4 tsp cayenne pepper (adjust for heat preference)
  • Salt and pepper to taste
  • 4 whole wheat pita breads
  • 1 cup cherry tomatoes, halved
  • 1 small cucumber, sliced
  • 1/2 red onion, thinly sliced
  • 1/4 cup Kalamata olives, pitted and sliced
  • 1/2 cup crumbled feta cheese
  • 1 cup tzatziki sauce
  • Fresh mint leaves for garnish

Cooking Instructions

  1. In a large bowl, combine the ground lamb, harissa paste, cumin, smoked paprika, cayenne pepper, salt, and pepper. Mix until well incorporated.
  2. Heat a skillet over medium-high heat. Add the lamb mixture and cook, breaking it up with a spoon, until browned and cooked through, about 8-10 minutes.
  3. While the lamb is cooking, warm the pita breads in a dry skillet or toaster until soft and pliable.
  4. To assemble the sandwiches, spread a generous spoonful of tzatziki sauce on each pita.
  5. Divide the cooked lamb evenly among the pitas, placing it on top of the tzatziki.
  6. Top with cherry tomatoes, cucumber slices, red onion, Kalamata olives, and crumbled feta cheese.
  7. Garnish with fresh mint leaves.
  8. Fold the pitas in half and serve immediately.
