Smoky Greek Eggplant Pita Sandwich

A dairy-free and smoky twist on a traditional Greek sandwich, featuring grilled eggplant and flavorful spices.

Ingredients:


  • 1 large eggplant, sliced into rounds
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 4 whole wheat pita bread
  • 1 cup diced tomatoes
  • 1/2 cucumber, thinly sliced
  • 1/4 red onion, thinly sliced
  • Fresh parsley, chopped
  • Dairy-free tzatziki sauce (optional, for serving)

Cooking Instructions


  1. Preheat a grill or grill pan over medium-high heat.
  2. In a bowl, combine olive oil, smoked paprika, cumin, garlic powder, salt, and pepper. Brush this mixture onto both sides of the eggplant slices.
  3. Grill the seasoned eggplant slices for about 3-4 minutes per side, until tender and grill marks form.
  4. While the eggplant is grilling, warm the pita bread on the grill for about 1 minute per side.
  5. To assemble the sandwiches, place a few slices of grilled eggplant inside each pita pocket.
  6. Top with diced tomatoes, cucumber slices, red onion slices, and fresh parsley.
  7. Drizzle with dairy-free tzatziki sauce if desired.
  8. Serve the smoky Greek eggplant pita sandwiches warm and enjoy!
