Tangy Lemon-Spiced Cauliflower Bites

A refreshingly tangy and aromatic low-carb Indian side dish featuring roasted cauliflower seasoned with a vibrant lemon spice blend.

Ingredients:


  • 1 medium head of cauliflower, cut into florets
  • 2 tablespoons olive oil
  • 1 teaspoon ground turmeric
  • 1 teaspoon cumin seeds
  • 1 teaspoon ground coriander
  • 1/2 teaspoon chili powder (adjust to taste)
  • 1 teaspoon black salt (or regular salt)
  • 1 tablespoon lemon juice
  • 1 tablespoon lemon zest
  • 2 tablespoons chopped fresh cilantro
  • 1 green chili, finely chopped (optional)
  • 1/2 teaspoon black pepper

Cooking Instructions


  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine olive oil, ground turmeric, cumin seeds, ground coriander, chili powder, black salt, and black pepper.
  3. Toss the cauliflower florets in the spice mixture until they are evenly coated.
  4. Spread the seasoned cauliflower evenly on the prepared baking sheet.
  5. Roast in the oven for 20-25 minutes, or until the cauliflower is tender and slightly crispy on the edges.
  6. Remove the cauliflower from the oven and immediately drizzle with lemon juice and sprinkle with lemon zest.
  7. Garnish with chopped fresh cilantro and finely chopped green chili, if using, for an extra kick.
  8. Serve warm as a tangy, flavorful side dish.
