Herb-Infused Grilled Shrimp and Avocado Sandwich

A unique herbal sandwich featuring grilled shrimp, fresh herbs, and avocado, perfect for pescatarian diets.

Ingredients:


  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • 2 teaspoons fresh dill, chopped
  • 2 teaspoons fresh basil, chopped
  • 2 teaspoons fresh parsley, chopped
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 ripe avocados, sliced
  • 1 cup mixed greens
  • 8 slices whole-grain bread
  • 1 tablespoon mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 teaspoon honey
  • 1 tablespoon capers, drained

Cooking Instructions


  1. In a bowl, combine olive oil, lemon juice, dill, basil, parsley, garlic powder, salt, and pepper. Add shrimp and toss to coat. Let marinate for 10 minutes.
  2. Preheat a grill or grill pan over medium-high heat. Grill shrimp for 2-3 minutes per side or until opaque and cooked through. Remove from heat.
  3. In a small bowl, mix mayonnaise, Dijon mustard, and honey. Spread this mixture on one side of each bread slice.
  4. Layer avocado slices, grilled shrimp, mixed greens, and capers on four bread slices. Top with remaining bread slices to form sandwiches.
  5. Optionally, grill the sandwiches for 1-2 minutes per side to warm the bread and slightly melt the avocado.
  6. Serve immediately and enjoy your herbal-infused sandwich.
