Coconut Lime Chia Pudding Parfait

Ingredients:


  • 1 cup unsweetened coconut milk
  • 1/4 cup chia seeds
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • Zest of 1 lime
  • 1 cup plain Greek yogurt (ensure gluten-free)
  • 2 tablespoons honey
  • Juice of 1 lime
  • 1/2 cup fresh raspberries
  • 1/4 cup toasted coconut flakes

Cooking Instructions


  1. In a medium bowl, whisk together the coconut milk, chia seeds, maple syrup, vanilla extract, and lime zest. Cover and refrigerate for at least 4 hours or overnight until the mixture thickens to a pudding-like consistency.

  2. In another bowl, mix the Greek yogurt with honey and lime juice until smooth and well combined.

  3. To assemble the parfaits, layer the chia pudding and lime yogurt alternately in serving glasses, starting with the chia pudding.

  4. Top each parfait with fresh raspberries and a sprinkle of toasted coconut flakes.

  5. Serve immediately for a refreshing treat, or keep chilled until ready to serve.
