Ingredients:


  • For the Pretzel Bites:

    • 1 cup warm water (110°F/45°C)
    • 2 1/4 tsp active dry yeast
    • 1 tbsp sugar
    • 2 1/2 cups all-purpose flour
    • 1 tsp salt
    • Zest of 1 lemon
    • Zest of 1 orange
    • 1/4 cup baking soda
    • 1 egg, beaten (for egg wash)
    • Coarse sea salt, for sprinkling
  • For the Zesty Mustard Dip:

    • 1/2 cup German mustard
    • 2 tbsp honey
    • Juice of 1 lime
    • 1 tsp horseradish
    • Pinch of cayenne pepper

Cooking Instructions


  1. Prepare the Dough:

    • In a large bowl, combine warm water, yeast, and sugar. Let sit for about 5 minutes until frothy.
    • Add flour, salt, lemon zest, and orange zest to the yeast mixture. Stir until a dough forms.
    • Knead the dough on a floured surface for about 5 minutes until smooth and elastic. Place in a greased bowl, cover, and let rise in a warm place for 10 minutes.
  2. Shape the Pretzel Bites:

    • Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
    • Divide the dough into small, bite-sized pieces.
    • In a pot, bring 8 cups of water to a boil. Add baking soda.
    • Boil pretzel bites in batches for about 30 seconds each. Remove with a slotted spoon and place on the prepared baking sheet.
  3. Bake the Pretzel Bites:

    • Brush the boiled pretzel bites with beaten egg and sprinkle with coarse sea salt.
    • Bake in the preheated oven for 10-12 minutes until golden brown.
  4. Prepare the Zesty Mustard Dip:

    • In a small bowl, whisk together German mustard, honey, lime juice, horseradish, and cayenne pepper until smooth.
  5. Serve:

    • Serve the warm pretzel bites with the zesty mustard dip on the side.
